Unlike other breeds where you cant tell the difference between a dog and a bitches personality, In cocker spaniels a bitch is more quieter and can be more easier to house train but they do have seasons approximately every 6-12 months, During the season keep your Bitch away from male dogs for 3 weeks, When a bitch is in season it will get a discharge of blood.

Dogs are usually bigger than bitches and will be a bit stronger.
